What the business is
Mellow makes a $399 smart sous-vide machine that weighs food and adjusts cook timing automatically; basic remote temperature control stayed free.
How it started
Released in 2014 at $399 and billed as the world's first smart sous-vide machine, promising automatic weigh, heat and cool with mid-cook schedule adjustments.
What happened
A July 2020 app update barred owners from most previously free smart features without a Premium Subscription, leaving manual mode as the only free option; the company cited pandemic hardships, departed investors and acquirers, and server costs, and delayed its second-gen product six months.
What has to be true
At $399 the smart features were the entire premium over a $129 Anova Nano — paywalling them erased the reason to have bought Mellow.
The explanation arrived after the lockout and disappeared within a day, so even a credible server-cost story read as an excuse.
Kickstarter gen-2 backers were asked to fund a company that had just devalued gen-1 ownership, compounding the betrayal.
Coming in the same season as Wink and Wyze's paywalls, it read as an industry pattern of retroactive fees, not one company's hardship.
What can be applied
Charging for features buyers already paid for converts your happiest users into critics — recurring revenue can't rescue trust once spent.
Aftermath
App-store reviews filled with 'bait and switch' complaints; some second-generation Kickstarter backers demanded refunds; the second-gen product slipped six months on pandemic travel bans. As of late July 2020 the subscription stood.
