An Israeli alternative seafood company making a plant-based whole-cut salmon filet that mimics cooked salmon in taste, texture, appearance and structure, with high protein and Omega-3 from algae.

$12M seed led by State of Mind Ventures with Pitango Health Tech, Unovis, TechAviv Founder Partners, SmartAgro, E2JDJ, Alumni Ventures, FoodHack Syndicate and OurCrowd, on top of a $2M initial round; $14M total.

CEO Ofek Ron started the company in 2021 with Dr. Ron Sicsic, chemistry expert Dr. Hila Elimelech, bioengineer Dr. Ariel Szklanny and Eyal Briller, formerly director of product at Impossible Foods — a team assembling food-tech, chemistry and bioengineering around one structural problem.

Plantish deconstructs salmon to its molecules and rebuilds it from plant-based proteins and algae extrusions for Omega-3 and structure. Because its inputs are already used in US food, no FDA approval is needed — unlike cell-cultured rivals such as Wildtype, which raised $100M for cultivated sushi-grade salmon. Funding goes to R&D and a facility to build the machines that mix proteins and algae extractions.

It attacks the hardest technical problem — fibrous whole-cut structure — where the market value concentrates, instead of competing in the crowded minced-fish segment.

Restaurants are the right first channel for a product whose value is texture: a chef-prepared filet showcases structure a freezer aisle cannot.

The regulatory shortcut (plant proteins already in the food supply) means a fraction of the capital and time of cultivated-seafood rivals.

Generations of a product category are defined by what couldn't be copied yet: taste, then texture, then structure — and whoever solves the hardest layer first can skip the commodity stage entirely.

As of the March 16, 2022 announcement, Plantish was pre-revenue and building toward pop-ups and its first five restaurants; the material records no later outcome.
