How it started

Perumal Gandhi, who co-founded Perfect Day, and Bonney Oommen, its former chief product and strategy officer, founded Melazyme in 2025 in Utah. Background

Melazyme is a Utah precision-fermentation startup founded in 2025 by Perumal Gandhi, co-founder of Perfect Day, and Bonney Oommen, Perfect Day's former chief product and strategy officer. Their bet is that fermentation should stop competing on commodity dairy protein and instead produce molecules where control over function is the differentiator.

Its two focus molecules are melanin and brazzein. Melanin is a naturally occurring biopolymer combining broad-spectrum UV absorption, chemical stability and strong affinity for metal ions, positioning it for cosmetics, coatings, filtration and rare-earth recovery; Melazyme says its fermentation process yields melanin at over 99% purity versus 70-80% from cuttlefish and about 75% from chemical synthesis. Brazzein is a heat-stable sweet protein from the West African Oubli fruit, 500-2,000 times sweeter than sucrose, being advanced with commercial partners.

In May 2026 Melazyme closed a $2M seed led by Bangkok-based deep-tech fund SeaX Ventures, with Stellaris Venture Partners and Plug and Play Ventures participating, to fund platform development, production scale-up and early commercial deployment. Near-term revenue is aimed at cosmetics, where its melanin precursor can bind hair keratin and restore natural color without ammonia or oxidative dyes.

The company's patent-pending platform is designed to tune molecular function for specific end uses, and it bets the precision-fermentation market will grow from roughly $20 billion today to over $70 billion by 2030. The seed only proves the thesis is fundable; Melazyme still has to show that its non-commodity molecules can be produced at commercial cost.
